Aged for six months in our subterranean barrel hall, where the temperature holds steady at 15°C, this gin has undergone a slow, considered maturation in a large-format ex- Mitchelton Heathcote Shiraz cask. The result? A luxurious layering of flavour—juicy raspberries and soft vanilla, underpinned by a gentle kiss of woodspice from the seasoned oak.
